Awesome baked oatmeal found here: http://budgetbytes.blogspot.com/2011/09/baked-pumpkin-pie-oatmeal-277-recipe.html I added the almonds because they were on hand... and I probably didn't have to add an entire cup. Leave them out or add another nut or raisins.

Recipe Ingredients for Baked Pumpkin Oatmeal

15 oz Pumpkin
0.5 cup, packed Sugars, Brown
2 large Egg, White
1 tsp Pumpkin Pie Spice
0.5 tsp Salt, Table
0.75 tsp Baking Powder
0.5 tsp Vanilla Extract
1 cup Milk, Nonfat, Fluid
8 oz Greek Style Yogurt
750 cal Old Fashioned Oats
1 cup, slivered Almonds

Recipe Directions for Baked Pumpkin Oatmeal

  1. Preheat oven to 350. Mix ingredients, adding oats and almonds last. Pour into greased 8x8 pan. Bake 30 min. covered with foil, then remove foil and bake for another 15.

  2. I added the almonds because they were on hand... and I probably didn't have to add an entire cup. Leave them out or add another nut or raisins.
