My own concoction. I'd prefer to add onions, chives, etc. though I couldn't sell it to my family w/ veggies in it, so I'll likely smother my serving with salsa!

Recipe Ingredients for Baked Potatos, Eggs & Canadian Bacon

4 potatos, baked
4 eggs, medium
8 egg whites
4 oz. canadian bacon, chopped

Recipe Directions for Baked Potatos, Eggs & Canadian Bacon

  1. Preheat oven to 300 degrees.

  2. Peel baked potato & slice or chunk. In cast iron skillet, cook on low heat in wee bit of fat (just so they don't stick to pan). Season as you please. I used pepper.

  3. Add Canadian bacon and continue warming, stirring occaisionally.

  4. Beat eggs & egg whites. Add to potatos & Canadian bacon. Pop in oven for about 30 minutes.

  5. Serve w/ salsa or whatever pleases your palate.
