Recipe Ingredients for Baked potatoes and tomatoes with garlic and basil

1000 g potatoes
400 g tomatoes
2 cloves garlic
1/2 cup fresh basil
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Baked potatoes and tomatoes with garlic and basil

  1. Scrub the potatoes and par-boil them for 10 minutes. Allow to cool a bit. Slice the potatoes thinly. Wash and slice the tomatoes thinly, chop the garlic finely and shred the basil.

  2. In a lightly oiled oven-proof dish, layer potatoes and tomatoes, scattering the garlic and basil on each tomato layer, as well as seasoning as you go.

  3. Drizzle with the rest of the olive oil and bake in a moderate oven for about an hour. Cover with foil if it starts to brown too much.
