Recipe Ingredients for Baked Potatoes with Eggs

1600 g potatoes, baking
1 tsp olive oil
140 g broccoli
100 g mushrooms
8 medium eggs

Recipe Directions for Baked Potatoes with Eggs

  1. Preheat the oven to 190C and bake the potato for 60 to 75 minutes until soft inside.

  2. Before removing the potatoes from the oven fry the broccoli and mushrooms for about 3 minutes.

  3. Cut the potatoes in half and scoop out most of the flesh. Mix this with the broccoli and mushrooms, and season with salt and pepper.

  4. Place back in the potato halves and make a well to be filled with 1 egg each.

  5. Return the potato halves to the oven and cook for about 15 minutes, until the eggs have set.
