Tasty and low in fat - better than fries. While the oven is on roast some halved and seasoned tomatoes with a drizzle of olive oil - two tasty side dishes.

Recipe Ingredients for baked potato wedges

500 g potatoes
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper

Recipe Directions for baked potato wedges

  1. Scrub the potatoes but do not peel (should be three medium ones)

  2. Cut each one into eight wedges

  3. Add to pan of boiling water, bring back to boil and simmer for 4 or 5 minutes. Drain and pat dry.

  4. Put the oil, ground sea salt, ground black pepper and a pinch of dried chilli flakes (optional) and maybe some Italian seasoning mix into a large bowl.

  5. Add the dry potatoes and mix well.

  6. Spread out on a baking sheet and bake for 25 minutes in preheated oven at 180 degrees C or until golden brown.
