Recipe Ingredients for Baked Potato Soup

1 cup Fat Free Cottage Cheese
4 large (3" to 4-1/4" dia.) Potatoes, Boiled
0.67 cup All Purpose Flour
6 cup Milk, Nonfat, Fluid
4 oz 2% Milk Reduced Fat Sharp Cheddar Cheese
1 tsp Salt, Table
0.5 tsp Pepper, Black
0.75 cup, chopped Onions, Spring Or Scallions
6 slice Extra Lean Turkey Bacon

Recipe Directions for Baked Potato Soup

  1. Preheat oven to 400 degreesF

  2. Pierce potatoes with fork, bake for one hour. Cool. Peel, and then mash.

  3. Spoon flour into dry measuring cup. Place flour in a large Dutch oven, gradually add milk, stirring with whisk until blended. Cook over medium heat until thick/bubbly (about 8 mins). Add mashed potatoes, 3/4 cup cheese, salt, and 1/2 tsp pepper, stirring until cheese melts. Remove from heat.

  4. Stir in sour cream and 1/2 cup onions. Cook over low heat 10 mins. Ladle 1 1/2 cups soup into bowls. Sprinkle each with 1 1/2 tsp cheese, 1 1/2 tsp onions, and about 1 tbs bacon. Garnish with pepper.
