Thick, rich, comforting soup for the crock pot.

Recipe Ingredients for Baked Potato Soup

2 cups chicken stock
3/4 cups potato flakes
1 large onion
2 large potatoes
4 medium slices bacon
1/2 tbs dried basil
1 tbs dried thyme
1 tsp kosher salt
1 tsp black pepper
1 tbs butter

Recipe Directions for Baked Potato Soup

  1. Cut bacon into small pieces and cook in frying pan. Remove and drain on paper towels.

  2. Brown diced onion in bacon grease.

  3. Add 1/2 cup water, 1 tbs butter, and 3 tbs flour to onion mix.

  4. Stir continuously until boiling or thickened.

  5. Transfer to 3 Qt crock pot along with bacon, potatoes (peeled and diced), basil, thyme, salt, pepper, and potato flakes.

  6. Cook on low heat for 4-6 hours or until potatoes are tender.
