I used 1 tsp of bacon fat and 2 Tbsp real bacon bits to replace 3 slices of bacon. Be sure to bake the potatoes first and then dice.

Recipe Ingredients for Baked Potato Soup

0.03 lb of bacon
1 tsp olive oil
2 medium onions
1/4 c flour
16 oz chicken stock
16 oz skim milk
3 oz cream cheese
6 medium potatos
1/4 c fresh parsley
1 tsp tabasco
1 tsp salt
1 pinch of Nutmeg
1 tsp black pepper
1/4 c cheddar cheese, shredded

Recipe Directions for Baked Potato Soup

If using bacon slices, cook 3 slices in large stock pot. Remove cooked bacon and set aside. Add onion to 1 tsp of bacon grease and olive oil then stir until soft. Add flour until lightly brown. Whisk in stock slowly. When flour is well blended add milk and cream cheese. Cook on low for about 5 minutes. Add baked potatoes, parsley, salt and pepper, nutmeg and tabasco and crumbed bacon slices or real bacon bits. Simmer for about 10 minutes then add the cheddar cheese. Soup can be thinned with more skim milk.
