"Baked" Potato Soup Recipe

Another easy crock pot soup recipe. Each serving is one cup. Can top with additional shredded cheddar if desired.

Recipe Ingredients for "Baked" Potato Soup

6 large russet potatoes, cut into 1/2" cubes
1 large onion, chopped
42 oz chicken broth
1/2 cup butter
1 cup half and half
4 oz sharp cheddar cheese, shredded
3 T chopped fresh chives
8 oz reduced fat sour cream
4 turkey bacon slices, cooked and crumbled

Recipe Directions for "Baked" Potato Soup

  1. Combine first 4 ingredients in 5 quart slow cooker. Add salt if desired. Cover and cook on high 4 hours or low 8 hours or until potatoes are tender.

  2. Mash mixture until potatoes are coarsely chopped and soup is slightly thickened. Stir in half and half, cheese and chives. Top with sour cream and sprinkle crumbled bacon and additional cheese. Top with fresh ground pepper.

  3. NOTE: Original recipe calls for whipping cream or half and half and peeled potatoes. I leave the skins on for the nutrients.
