Baked Potato Soup with Broccoli & Cheddar from "Healthy Cooking for Two" by Frances Price, RD

Recipe Ingredients for Baked Potato Soup with Broccoli & Cheddar

2 potato, baked
3 cups of skim milk
2 cups frozen chopped broccoli
56 grams 2% milk reduced fat shredded cheddar cheese (1/2 cup)
1 tablespoon of salt
1 dash of pepper

Recipe Directions for Baked Potato Soup with Broccoli & Cheddar

  1. Cut the baked russet potatoes into chunks and combine them with the milk in a blender. Process the mixture until smooth. Add the broccoli and process, pulsing the motor on and off, until the broccoli is coarsely pureed. You should still be able to see tiny broccoli buds.

  2. Transfer the mixture to a heavy 2-quart (or 3-quart) saucepan and bring to a simmer over medium heat. Remove the soup from the heat, then stir in the Cheddar, salt and pepper. Serve hot.
