Creamy, hearty soup. Modified recipe - removed cheddar cheese and bacon, and replaced sour cream with yogurt. Delicious without all the fixings!

Recipe Ingredients for Baked Potato and Leek Soup

2 russet potatoes, baked
2 leeks, sliced
1/2 stick butter without salt, melted
2 cloves garlic, minced
2 cups fat free chicken broth (i152297)
2 cups water
1/2 cup 2% milk
1/2 cup fat free plain yogurt
1 salt and pepper

Recipe Directions for Baked Potato and Leek Soup

  1. Preheat oven to 375. Wash/scrub potatoes. Pierce several holes in potatoes. Place directly on rack and bake for 1 hour. Once cooked, place on cooling rack and cool completely.

  2. Clean and chop leeks (use only white and light green parts). Melt butter in pot at medium low. Put in leeks and garlic. Cook until soft, about 10 minutes. Pour in chicken broth and water, turn up heat to medium, cook until leeks are tender 2 minutes.

  3. Cut one potato in half. Scoop potato out of skin and cut into 1/2 inch cubes. Set aside. Roughly chop skin and entire remaining potato and put in pot.

  4. Use immersion blender to blend soup until smooth.

  5. Whisk together milk and yogurt. Then wisk into soup.

  6. Add potato cubes that were set aside. Stir in.

  7. Season with salt and pepper to taste.
