Recipe Ingredients for Baked Potato and Grilled Veggies

2 medium potato
2 cups yellow squash
1 medium yellow onion
1/2 cup diced tomatoes
2 tbsp cilantro
1/4 cup red kidney beans
1/2 cup bell pepper

Recipe Directions for Baked Potato and Grilled Veggies

  1. Bake potato in microwave

  2. add all other veggies into pan and pan fry with pam or other spray oil for approximately 8-10 minutes, add salt, pepper and other spices (such as cumin, garlic powder, or red pepper flakes) to taste.
