Delicious twice-baked potatoes with an egg center!

Recipe Ingredients for Baked Potato Eggs

2 large potatoes
1 c low fat cheddar cheese, shredded
1/4 c milk
2 tbsp butter
4 eggs
1/4 tsp salt

Recipe Directions for Baked Potato Eggs

  1. Wash the potatoes and poke 10-12 times with a fork.

  2. Bake them at 400F for about 1 hour 15 minutes.

  3. Carefully cut the potatoes in half and scoop out the center, leaving about 1/8 inch inside the skin.

  4. Mash the removed potato with the butter, milk, and cheese. (This is where you can fold in cooked sausage or bacon.)

  5. Fill the potato skins with the mashed mix, and make a well in the center like if you were to fill them with gravy.

  6. Crack one egg, or pour one egg scrambled, into the center and lightly salt the eggs.

  7. Bake for another 20 minutes until the egg is set (it may take longer than 20 minutes).

  8. Enjoy!
