Low fat baked potato cheesy casserole

Recipe Ingredients for Baked Potato casserole

8 potatoes
1 c. nonfat yogurt
6 oz. montery jack cheese
2 oz. Low fat Plain Cream Cheese
4 T. margarine
1/2 c. corn flakes

Recipe Directions for Baked Potato casserole

  1. Boil potatoes (diced with skin on) for 20 minutes or until tender.

  2. Mash with a potato masher and blend with rest of the ingredients except corn flakes.

  3. Put in baking dish and top with crushed corn flakes.

  4. Bake at 350 F for 20 - 25 minutes.
