Recipe Ingredients for baked potato with cabbage and cumin

2 lb potatoes
3 tbsp olive oil
2 cloves garlic
12 oz savoy cabbage
3 eggs
5 oz mozzarella
1 tsp cumin
1/2 cup parmesan cheese

Recipe Directions for baked potato with cabbage and cumin

  1. Boil potatoes - 20-25 min. Mash 2/3 of potatoes. Cut remaining into bite-size pieces. Place in a bowl.

  2. Oven - 350. Grease 10-inch baking pan.

  3. Heat oil. Add garlic and cabbage and saute 10-15 min.

  4. Add cabbage to potatoes and mix gently. Add eggs, mozzarella, half the cmin, and parmesan. Season with SP. Mix well.

  5. Spoon mixtre into prepared pan and level surface with back of spoon. Sprinkle with remaining cmin.

  6. Bake 35-40 min.
