Recipe Ingredients for Baked Potato and Broccoli Soup

2 yukon gold potatoes (or 1 russet)
1 1/2 cups whole milk
1/2 cup cheese, shredded
1 cup broccoli, chopped
1/2 cup fat free sour cream
1 salt
1 pepper

Recipe Directions for Baked Potato and Broccoli Soup

  1. Bake the potatoes in the oven until the skin is crispy and the middle tender.

  2. Add the potatoes, broccoli, milk, and sour cream to a blender and blend until smooth but broccoli buds are still visible.

  3. Bring to a simmer in a large pot, and add the chedder cheese, salt and pepper to taste.
