This is an easy and delicious dinner! I often pair it with a side salad with light dressing.

Recipe Ingredients for Baked Potato with Broccoli and Cheese

1 cup, chopped Broccoli
1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1 tbsp Margarine Like Spread
1 grams Wheat Flour, White, All-purpose, Enriched, Bleached
0.5 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 serving 2% Milk Reduced Fat Mild Cheddar

Recipe Directions for Baked Potato with Broccoli and Cheese

  1. Microwave potato for 5 minutes

  2. Steam broccoli

  3. Make white sauce: melt margarine, then add flour in a sauce pan over medium heat. Once that changes color a bit (turns either copper or golden - this can depend on your margarine), add milk slowly. Stir until combined. Then add most of cheese - save a small amount for topping potato.

  4. Combine white sauce and broccoli. Pour over potato and top with extra cheese.
