Recipe Ingredients for Baked Potato Boats

2 potatoes, large Idaho or Russet
1 pound squash
1/4 cup butter, melted
1 tsp cumin
1/2 tsp salt
1 tsp paprika, sweet Hungarian

Recipe Directions for Baked Potato Boats

  1. Bake potatoes in a pre-heated 425° F oven until done, about 1 hour.

  2. While potatoes are baking peel and dice squash and place in vegetable steamer, covered, over boiling water for about 15 minutes or until very soft.

  3. Cool potatoes slightly, cut in half while still warm, and gently scrape pulp from skin taking care not to tear skin.

  4. Combine squash, potato pulp, melted butter (reserving 2 tsp for use later), cumin, and sea salt with potato masher or in food processor until you have a creamy yellow puree.

  5. Heap potato squash mixture into empty potato skin shells overfilling slightly, and brush with reserved melted butter.

  6. Sprinkle with paprika and place under broiler for approx 10 mins. or until lightly browned.
