This is a very flavorful, spicy, one dish meal. The beans and sweet potato blend with the spices and the honey and citrus add slight sweetness. It is a quick meal.

Recipe Ingredients for Baked Pork Tenderloin with Orange Honey Glaze

1 lb Pork Tenderloin
1 medium sweet onion, sliced
3 Sweet Potato.
1 cup black beans
1/2 cup orange juice
4 g Stevia 2 packets
1 T. chili powder (I used chipotle)
2 cloves garlic, minced
1 salt and pepper to taste
1 tbsp flour
2 tbsp coconut oil

Recipe Directions for Baked Pork Tenderloin with Orange Honey Glaze

  1. You will need a baking pan or roast pan. A 9x13 with deep sides will work, grease lightly.

  2. Add the olive oil to a frying pan. Brown the tenderloin on all sides and then place it in the baking pan. Layer the sweet potato chunks the sliced onions, and the black beans over the tenderloin.

  3. In a small saucepan, melt the butter. Add the orange juice, garlic, chili powder, and honey. Mix well. Add the cornstarch. This will thicken the mixture. I add water to increase the amount of liquid depending on the amount of orange juice I have. The liquid should total 1-2 cups when done.

  4. Pour the glaze over the vegetables and tenderloin. Cover with foil and cook at 350 until the tenderloin is fully cooked. The sweet potatoes should be tender. Serve on a heated platter. Really a pretty presentation.
