Recipe Ingredients for baked pork cultlets with roasted potatoes and applesauce

50 lbs. pork tenderloin, trimmed
25 c. panko
8 T. paprika
8 T. onion powder
2 quart honey
2 quart apple juice
4 c. canola oil
6 1/4 potatoe
1/2 c. rosemary
75 lbs. apple, peeled, cored, chopped
4 1/2 gallon water
25 c. honey
1 3/4 c. lemon juice

Recipe Directions for baked pork cultlets with roasted potatoes and applesauce

  1. slice pork into 1 oz. cutlets

  2. whisk together apple juice, honey, paprika, and onion powder

  3. place pork into mixture and then coat with panko

  4. slightly coat sheet pans with canola oil to prevent sticking and to brown pork

  5. place pork on sheet pans, but do not allow to touch

  6. bake @ 400 degrees about 15 min. or until internal temp. reaches 145 degrees

  7. large dice potatoes

  8. toss in a large mixing bowl with canola oil

  9. place on sheet pan and roast @ 450 degrees

  10. when fork tender pull and sprinkle with rosmary

  11. serve immediatly

  12. place apples steam kettle and just cover with water

  13. simmert until apples are tender

  14. the mix with an immersion stick blender till smooth

  15. stir in honey and lemon juice

  16. cook for additional 5 min.

  17. place in soup bains to keep warm for service
