Polenta with tomato sauce and cheese

Recipe Ingredients for Baked Polenta

1 cup cornmeal
3 cups water, boiling
1 tablespoon olive oil
1/2 cup parmesan cheese, grated
1 cup 2% cheddar cheese
1 cup tomato sauce

Recipe Directions for Baked Polenta

  1. In a saucepan, stir cornmeal into boiling water. Add olive oil and stir until thickened. Stir parmesan cheese into the cornmeal. Pour into small casserole. Spread tomato sauce over the polenta and top with cheddar cheese.

  2. Bake in 350 degree oven for 20 minutes until sauce is bubbly and cheese is melted.
