Recipe Ingredients for Baked Polenta

150 g polenta
60 g finely grated Parmesan

Recipe Directions for Baked Polenta

  1. Line a 9inch round cake tin with foil.

  2. Pour 350ml of stock and 350ml of water into a saucepan and bring to the boil

  3. Add the polenta in a thin stream and stir over low heat for 5 minutes or until the liquid is absorbed and the mixture comes away from the side of the pan.

  4. Remove from the heat and stir in the cheese until it melts through the polenta.

  5. Spread into the prepared tin smoothing the surface as much as possible.

  6. Refridgerate until set.

  7. Preheat the oven to 200C

  8. Turn out the polenta peel of the foil and cut into 6 wedges.

  9. Brush lightly with olive oil and bake for 20 minutes or until lightly brown and crisp
