Plantains are the bananas of tropical regions. A ripe plantain has black skin and is very soft. A substitute for 3 plantains would be 5 bananas.

Recipe Ingredients for Baked Plantains in Orange Sauce


Peel and slice:
4 bananas

Place in greased baking dish and dot with:
2 T. margarine

Pour over plantains:
3/4 c. orange juice

Sprinkle with:
1 t. orange rind, grated
1/4 t. ground cinnamon or nutmeg (optional)

Recipe Directions for Baked Plantains in Orange Sauce

  1. Bake, uncovered, 20- 25 minutes, basting occasionally.

  2. Serve warm with dab of whipped cream, ice cream, or frozen yogurt.

  3. (optional) Serves 6.
