Recipe Ingredients for Baked Pesto Chicken

2 lbs skinless boneless chicken breasts, cut in half
3/4 c pesto
3 plum tomatoes, sliced
7 oz mozzarella cheese slices, cut in half

Recipe Directions for Baked Pesto Chicken

  1. Preheat oven to 350 degrees

  2. In a large bowl, toss chicken breast halves with pesto sauce to coat

  3. Place each piece on a deep baking sheet lined with foil

  4. Pour any remaining pesto over the pieces of chicken

  5. Bake for 25-30 minutes

  6. Remove from oven

  7. Place tomato slices on top of each piece of chicken

  8. Place a half slice of cheese on each piece of chicken

  9. Return to oven for 5-10 more minutes until cheese is melted and bubbly (or broil for 2-3 minutes)
