A lovely, filling dish, full of goodness, but not hard on the purse. Ideal for 4 for a main meal, or 6 for lunch.

Recipe Ingredients for Baked Penne with Ricotta and Sausage

2 tsp vegetable oil
2 red onions, peeled, sliced
1 pepper, red chilli
2 garlic cloves, sliced
7 oz sausages, pork and beef
12 oz pasta, penne, cooked
7 oz ricotta, whole milk cheese
2 tomatoes, ripe, finely chopped
4 oz parmesan, hard cheese
1 tbsp parsley, chopped

Recipe Directions for Baked Penne with Ricotta and Sausage

  1. Grill the sausages until cooked, then allow to cool slightly, and thickly slice.

  2. Cook the penne according to directions, then drain.

  3. Shave the parmesan, weigh out 31/2oz, and put the remaining 1/2oz to one side for garnish.

  4. Preheat the oven to 180C/350F/Gas 4.

  5. Finely chop the chilli, and slice the onion and garlic.

  6. Heat the oil in a frying pan over a medium heat.

  7. Add the onions, chilli and garlic and fry for 3-4 minutes, or until softened.

  8. Add the cooked, sliced sausages, cooked pasta, ricotta and chopped tomatoes and stir well to combine.

  9. Transfer the mixture to an ovenproof dish and sprinkle over the parmesan shavings.

  10. Bake in the oven for 10-12 minutes, or until the cheese has melted and is golden-brown.

  11. To serve, divide the baked penne among four serving plates.

  12. Sprinkle over the remaining parmesan shavings and the chopped parsley.

  13. If desired, place 1-2 slices of garlic bread, or bread of your choice, alongside each serving.
