An Italian-style pasta casserole with ground turkey, two forms of tomatoes, and three cheeses. Prep time: 35 minutes Bake: 30 minutes

Recipe Ingredients for Baked Penne

8 oz Barilla Plus penne pasta
8 oz lean ground turkey
3 oz chopped onion
14 1/2 oz can diced tomatoes, undrained
6 oz tomato paste
1/3 c water
2 tsp dried oregano, divided
1/2 tsp salt
1/8 tsp ground black pepper
16 oz fat-free cottage cheese
8 oz part-skim mozzarella cheese, shredded

Recipe Directions for Baked Penne

  1. Preheat oven to 350 degrees (F). Spray a 11-in x 7-in baking dish with cooking spray.

  2. Cook pasta according to package directions (be sure to drain it at the al dente stage). Meanwhile, in a large saucepan, cook the ground turkey and onion over medium heat until the meat is done.

  3. Stir in the tomatoes, tomato paste, water, 1 tsp oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.

  4. In a bowl, combine cottage cheese and the other teaspoon of oregano (you may use 1 tsp marjoram instead).

  5. Spread a third of the meat mixture into the baking dish. Layer with half the pasta, more meat sauce, and half the mozzarella cheese. Top with all the cottage cheese mixture. Layer on remaining pasta, meat sauce, and mozzarella cheese. (The pan should be full.)

  6. Bake uncovered at 350 for 30-40 minutes or until bubbly and heated through.
