Whole wheat pasta smothered in a homemade sauce,topped with cheese and baked until the cheese is melted and the sauce is bubbly

Recipe Ingredients for Baked Penne

12 oz Penne, Whole grain
1 onion
1 tsp fresh rosemary
4 cloves garlic
1 large green pepper
5 large tomatoes
3/4 cup fat free yogurt
1/2 cup mozzarella, partially skim
20 oz fresh spinach
1 tsp oregano
1 large onion
1 dash black pepper

Recipe Directions for Baked Penne

  1. preheat oven to 350

  2. Large dice vegetables

  3. Sauce- Heat olive oil in large skillet over medium heat. Sweat onions, green pepper, and spinach along with rosemary, garlic, and oregano until vegetables are tender and spinach is wilted. Add Tomatoes and simmer over low heat for 20 to 30 minutes stiring occasionally.

  4. bring water to boil in large pot. Add pasta and boil until pasta is al dente.

  5. Grease 9x9 baking dish. Add small amount of sauce, half the pasta, Half the sauce and all the cottage cheese. Then layer the rest of the pasta,and sauce. Top with mozzarella. Bake until cheese is melted and sauce is bubbly
