Baked pasta with tomatoes and mozzerella

Recipe Ingredients for Baked Pasta with Tomatoes and Mozzarella

2 tbsp extra virgin olive oil
1 medium onion chopped
2 cloves garlic
1/2 tsp dried chili peppers
1200 g diced plum tomatoes
1 tsp basil
1 tbsp red wine vinegar
3 tbsp brown sugar
400 g pasta
450 g mozzerella cheese
1 tsp salt
1/4 tsp black pepper

Recipe Directions for Baked Pasta with Tomatoes and Mozzarella

  1. preheat oven to 400 F

  2. In pan add olive oil

  3. Saute onions, garlic, and chilis on med to low 10 mins

  4. Add tomatoes and basil

  5. Bring to the boil and simmer for 20 mins

  6. Put in blender

  7. Add salt, pepper, vinegar, and brown sugar

  8. Bring pasta water to the boil and add pasta and cook according to directions.

  9. Drain and toss with half of the sauce.

  10. Layer pasta in tray and sprinkle with parmesan and 150g of sliced mozzerella repeat two more layers ending with cheese.

  11. Bake 15 mins until top is bubbly and golden.
