Recipe Ingredients for Baked Pasta w/Spinach, Lemon, and Cheese

10 ounces whole wheat pasta
6 ounces baby spinach
1 tbsp olive oil
2 cups onion
1 ounce flour
4 garlic cloves
2 cups 2% milk
1/2 cup low sodium chicken broth
1 cup parmigiano-reggiano cheese
1/2 cup panko
1/4 teaspoon lemon rind

Recipe Directions for Baked Pasta w/Spinach, Lemon, and Cheese

  1. Preheat oven to 350

  2. Boil pasta 8 mins

  3. Stir in spinach, let sit 2 mins

  4. drain pasta

  5. heat skillet w/olive oil

  6. add onion cook 15 mins

  7. spoon in flour and garlic

  8. add milk and wine - stirring constantly 8 mins until thick

  9. stir in 1/2 cheese and lemon rind

  10. mix together with 1/2 panko

  11. cover with remaining cheese and panko

  12. cook in oven 50 minutes until brown and bubbly
