This makes a lot - it is meant to make several casseroles, so they can be made ahead and frozen. The basic recipe came from Real Simple magazine, but I added meat. I also lost the recipe, so it's what I remember.

Recipe Ingredients for baked pasta

1/4 cup olive oil
4 cups chopped yellow onion
4 tablespoons chopped garlic
360 ounces diced tomatoes
3 pounds fresh spinach
56 ounces tomato sauce
24 ounces tomatoe paste
16 ounces tomatoes
8 ounces sun dried tomatoes
4 ounces fresh basil
3 pounds italian sausage
32 ounces low fat mozzarella
6 ounces parmesan cheese
79 1/2 ounces whole wheat pasta

Recipe Directions for baked pasta

  1. broil the sausage

  2. make the sauce

  3. cook the pasta - al dente, as it will absorb some liquid and cook during baking

  4. mix pasta with the sauce

  5. mix cheeses together

  6. layer pasta/sauce mix with cheese

  7. top with cheese

  8. bake (convection 300 F) until hot and cheese is melted & brown

  9. may be frozen
