Baked Pasta with Mushrooms, Spinach, Tomatoes, Cheeses in a pesto sauce

Recipe Ingredients for Baked Pasta with Mushrooms, Spinach and Tomatoes

2 tbsp olive oil
1/4 cup sun-dried tomatoes
8 oz pasta
10 oz mushrooms
1/8 cup pine nuts
1/4 cup feta cheese
1/4 cup parmesan cheese
14 oz stewed tomatoes
2 tbsp garlic
4 oz spinach
4 tbsp pesto sauce

Recipe Directions for Baked Pasta with Mushrooms, Spinach and Tomatoes

  1. Cook pasta according to directions. Set aside.

  2. Heat 1tbps olive oil over medium heat and brown garlic. Add mushrooms when nearly cooked add spinach for a minute or two. Transfer to baking dish.

  3. Heat 1tbps olive oil over medium heat, add pine nuts and sun-dried tomatoes heat until pine nuts are browned. Transfer to baking dish.

  4. Add pasta, stewed tomatoes (drained), cheeses and pesto. When combined cook at 350 for 30 minutes.
