Baked Pasta Casserole with Chicken

Recipe Ingredients for Baked Pasta Casserole with Chicken

10 ounces cooked pasta
14 ounces diced tomatoes, no salt added
12 ounces boneless chicken breasts
2 tbsp olive oil
4 ounces shredded mozzarella cheese
1/4 cup bread crumbs
1/4 cup parmesean cheese
1 tbsp margarine
2 1/2 ounces onion
1 clove garlic
1/4 cup chopped fresh flat-leaf parsley
1/4 tsp salt, optional
1/4 tsp pepper

Recipe Directions for Baked Pasta Casserole with Chicken

  1. Place pasta in large mixing bowl.

  2. Heat oil oil in medium saute pan over medium heat. Add chicken and cook for 3 minutes.

  3. Add onion and garlic, cook until onion is soft and chicken is cooked through, 5 minutes.

  4. Add chicken mixture to bowl with pasta.

  5. Add tomatoes and their juice, mozzarella cheese, parsley, salt & pepper.

  6. Stir to combine.

  7. Spray with cooking spray, 8x8x2 inch baking dish.

  8. Add the pasta mixture.

  9. In small bowl, mix together bread crums, parmesean.

  10. Sprinkle over the top of the pasta.

  11. Dot the top with small bits of margarine.

  12. Bake at 400 degrees about 30 minutes until top is golden brown.
