Recipe Ingredients for baked pappardelle with squash

1 clove garlic
1 tbsp olive oil
16 oz butternut squash
1/2 cup chicken broth
14 oz. whole wheat linguine
1 tbsp parsley
1/8 tsp black pepper
8 oz fontina cheese
1 tbsp butter
1/4 cup parmesan cheese

Recipe Directions for baked pappardelle with squash

  1. Preheat oven - 400.

  2. Saute garlic. Add squash and wine and simmer 10 min.

  3. Cook pasta. Drain and add to squash. Simmer 2 min. Add parsley and season with pepper.

  4. Transfer to baking dish. Top with fontina and butter. Sprinkle with parmesan.

  5. Bake until lightly browned - 10-15 min.
