LOTS of flavor! Not quite as crunchy as fried but SO much better for you!

Recipe Ingredients for Baked Onion Rings

2 medium sweet onion, sliced into 1/4 inch rings
18 fl. oz low fat buttermilk (cup) (fl+oz)
1/2 c. Panko
1/4 c. Bread Crumbs
1 T. ground flax seed
1/4 c. corn flakes, crushed

Recipe Directions for Baked Onion Rings

  1. Place slices of onion in a dish with the buttermilk. Cover and let them soak for 2 hours or overnight in the refrigerator.

  2. Preheat oven to 450 degrees F. Line a baking sheet with foil and lightly spray with nonstick.

  3. In a dish or ziploc bag, combine Panko, bread crumbs, ground flax seed, and crushed corn flakes.

  4. Dredge each soaked onion ring through crumb mixture and place on prepared pan. Lightly spray with nonstick spray.

  5. Bake for 10-12 minutes or until golden brown.
