Makes 3 small (3x5") loaves. Each loaf can slice into 6 pieces.

Recipe Ingredients for Baked Oatmeal with Splenda

3 cups Old Fashioned Quaker Oats
1/2 cup brown sugar
2 tsp ground cinnamon
2 tsp baking powder
1 cup skim milk
2 eggs
1 cup unsweetened applesauce
1/2 cup dried cranberries
2 tsp vanilla extract

Recipe Directions for Baked Oatmeal with Splenda

  1. Preheat oven to 350F. Spray bottom of 9 x 13 pan or loaf pans with cooking spray.

  2. In large bowl, mix together oats, sugar, cinnamon, baking powder and salt. In small bowl, mix together milk, eggs applesauce and vanilla extract. Add wet ingredients to dry and mix well. Add fruit. Pour batter into prepared pan and bake for 35 - 40 minutes, or until golden brown. Let cool and cut into 12 squares.

  3. Can include in the batter or as toppings: Craisins, raisins, pecan pieces, walnut pieces, extra cinnamon, or chopped fresh apple.

  4. Makes 12 oatmeal squares in 9x13 pan. Can also cook in loaf pan or muffin pan. Fills 3 small (3x5") loaf pans, which can be sliced into 6 pieces.
