Recipe Ingredients for Baked Oatmeal Snack Bars

1 1/2 cup Oats, Regular And Quick And Instant, Unenriched
114 grams Oven Roasted Sea Salt Almonds
1 1/4 cup Vanilla
1 large Egg, Whole
1 tsp Vanilla Extract
1 oz Craisins Dried Cranberries

Recipe Directions for Baked Oatmeal Snack Bars

  1. Ingredients

  2. 1.5 cups rolled oats

  3. 1/2 cup chopped walnuts [or any nuts you like]

  4. 1/2 cup dried fruit (any you like ? raisins, cranberries, dates, figs)

  5. 1/4 cup seeds (any you like ? sunflower, pumpkin, flax, sesame)

  6. 1 tsp cinnamon

  7. 1 tsp kosher salt

  8. 1.25 cups skim milk

  9. 1 egg

  10. 1 tsp vanilla

  11. Method:

  12. Preheat oven to 350*

  13. Mix dry ingredients.

  14. Mix wet ingredients.

  15. Pour wet into dry. Stir to combine.

  16. Pour into a 99 baking dish either coated in cooking spray or lined with parchment.

  17. Bake for 40 minutes.

  18. Cut into 9 squares.

  19. Makes 9 servings . Each bar is appx. 170 calories, 3 grams fiber and 5 grams protein. [Cut into 12 squares reduces calories to about 125 calories per square]

  20. While delicious, the only sweetness in these comes from the dried fruit. Add in 1/4 ? 1/2 cup brown sugar if you like.

  21. The variations are endless: cranberries, coconut, all kinds of dried fruit, nuts, etc.
