Healthy baked oatmeal. Freezes well. Serve with milk or yogurt.

Recipe Ingredients for Baked Oatmeal

24 oz steel cut oats
2 cups yogurt
4 eggs
1/4 cup real maple syrup
10 g NuStevia White Stevia Powder
1/4 cup canola oil
1 cups milk
1 tbs vanilla
1/2 tsp salt
1 tbs flax seeds
1 tbs cinnamon
1 tbs baking powder
1 cup raisins
1 apple

Recipe Directions for Baked Oatmeal

  1. Combine oats with yogurt and water. Cover and let sit at room temperature for 6-8 hours or overnight.

  2. Preheat oven to 350 degrees and grease a 9x13 pan.

  3. Combine eggs, sugar/sweetener, oil, vanilla, cinnamon, flax seed and baking powder and mix well.

  4. Add 1 cup milk and mix.

  5. Add oats and fruit/nuts. Mix. If too thick, add additional milk.

  6. Pour into prepared pan and bake one hour or until set.

  7. Cut into squares and serve warm, cold or at room temperature. Freezes well.
