unusual twist on a friends baked oatmeal recipe

Recipe Ingredients for Baked oatmeal

4 1/2 c water
3 c oatmeal, quick cooking
1/2 c egg beaters
2 apples, unpeeled, cored, chopped
1/4 c sugar
1/4 c Splenda
1/2 c milk, 1%
1/2 c raisins
2 t baking powder
1 t salt
1 t cinnamon
1/4 t cloves, ground
1/2 c walnuts, chopped

Recipe Directions for Baked oatmeal

  1. add salt to water, bring to a boil

  2. add oatmeal, cook 1 minute

  3. remove from heat, let stand 5 minutes covered

  4. combine egg beaters, apples, sugar, milk, raisins, baking powder, and spices together

  5. stir in oatmeal, mix well

  6. spoon into casserole (9 " square)

  7. cover and rest in refridgerator over night

  8. let set 30 minutes at room temperature

  9. bake, uncovered at 350 degrees 60-65 minutes or until knife inserted comes out clean

  10. cut into 9 squares
