Almost like an oatmeal cake. Delicious!

Recipe Ingredients for Baked Oatmeal

3 cups oatmeal
1/2 cup brown sugar
1/4 cup honey
1/8 cup margarine
1/4 cup vegetable oil
2 eggs
1 cup milk
1 cup apple juice
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon

Recipe Directions for Baked Oatmeal

  1. Pre-heat oven to 375 degrees

  2. Mix Quick Cooking Oatmeal with brown sugar, baking powder and salt. Melt margarine in microwave and add vegetable oil. Beat eggs with oil and honey until honey disolves. Add wet ingredients to oatmeal mixture. Pour into a 9X13X2 cake pan (non-stick spray). Bake for 25 minutes. Serve warm with fresh fruit and yogurt, or milk. Re-heats great or is good as a cold snack.
