Oatmeal in baked form for breakfast! When I was a child, I wouldn't eat regular oatmeal, but I would eat this when I was at camp in the summer.

Recipe Ingredients for Baked Oatmeal

3 cups oatmeal
1 cup milk
1/2 cup sunflower oil
1 cup brown sugar
2 eggs
1 tsp sea salt
2 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla

Recipe Directions for Baked Oatmeal

  1. Preheat oven to 350 degrees F

  2. Melt butter/sunflower oil in large sauce pan on stove top.

  3. Turn off burner (so eggs won't cook).

  4. Stir in brown sugar, vanilla and eggs.

  5. Add oats, 1/2-1 cup raisins (optional), 1/2-1 cup nuts (optional) and dry ingredients.

  6. Stir in milk.

  7. Pour into buttered 8 inch square pan.

  8. Bake for 20-25 minutes or until firm in center.
