These baked oatmeal bars can be made with a cup of any kind of fresh or frozen fruit, and are freezer-friendly.

Recipe Ingredients for Baked Oatmeal

2 large eggs
1/2 cup granulated sugar
1/2 cup unsweetened applesauce
1 cup skim milk
3 cups quick cooking oats
1 tbsp baking powder
2 tbsp brown sugar
1/2 tsp ground cinnamon
1 1/2 cup fresh blueberries or fruit of choice

Recipe Directions for Baked Oatmeal

  1. Whisk eggs, sugar, applesauce and milk until creamy. Add oats, baking powder, brown sugar and cinnamon, and mix well. Fold in blueberries. Bake at 350 degrees for 30 minutes.

  2. To freeze, wrap portions tightly in saran wrap, and then place in a freezer ziplock bag. Reheat for approximately 20 seconds in a microwave.
