This is a nice alternative to traditional coffee cake. Can be enjoyed alone, or in a bowl with milk.

Recipe Ingredients for Baked Oatmeal

3 cups rolled oats
1 cup brown sugar
2 tsp ground cinnamon
2 tsp baking powder
1 tsp salt
1 cup milk
2 large eggs
1/4 cup butter
1/4 cup olive oil
2 tsp vanilla extract
3/4 cup dried cranberries
1/3 cup walnuts

Recipe Directions for Baked Oatmeal

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, olive oil and vanilla extract. Stir in dried cranberries and walnuts. Spread into a 9"X13 baking dish coated with non-stick spray.

  3. Bake for 40 minutes.
