Baked Oatmeal Muffins - made with ZERO oil and ZERO sugar. Super healthy, and easy to add your own toppings of many varieties. My kids love these, and they are an easy on-the-go snack that is a healthy alternative to packaged granola bars.

Recipe Ingredients for Baked Oatmeal Muffins

2 eggs
1 t vanilla
2 c applesauce
1 banana
1/4 c honey
5 c oatmeal
1/4 c ground flax seed
1 T cinnamon
3 t baking powder
1 t salt
2 3/4 c milk
1/2 c chocolate chips

Recipe Directions for Baked Oatmeal Muffins

  1. Add all ingredients in a bowl, stir until well combined. Divide into muffin tins (makes 24).

  2. Bake in a preheated 350 degree oven for about 25 minutes, or until the edges are slightly browned.
