Makes 30 servings



Serving-1 muffin. Can be frozen. Leave in refrig overnight to reheat next day

Recipe Ingredients for Baked Oatmeal, Individuals (sugarfreemom.com)

2 large eggs
2 cups unsweetened applesauce
5 cups old fashioned oats
1 banana
2 3/4 cups fat free milk
1/4 cup flaxseed meal
1/2 cup light brown sugar
1 T. ground cinnamon
1 T. baking powder
1 t. salt
1 t. vanilla extract
1/2 c raisins
1/2 c chopped pecans

Recipe Directions for Baked Oatmeal, Individuals (sugarfreemom.com)

  1. Preheat oven to 350. Put paper liners in muffin cups (recipe makes 30). Spray with cooking spray.

  2. Mix all liquid ingredients in large bowl.

  3. Combine dry ingredients, then mix into liquid ingredients. Fill muffin pans

  4. Bake 30mins or until a toothpick comes out clean.

  5. Other optional toppings: chopped apple, chocolate chips, toasted coconut, walnuts, etc. Can substitute, 6 pkts Stevia or 1 1/2 t Stevia powder or honey for brown sugar. (It will change the nutrients)
