A not so bad for you version of my favorite treat!

Recipe Ingredients for Baked mini cake doughnuts

3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup sugar
1 1/4 tsp baking powder
1/8 tsp nutmeg
3/4 tsp salt
1/2 cup low fat buttermilk
1/8 cup pumpkin
1 egg
1 1/2 tbsp margarine
2 tbsp confectioner's sugar
1/2 tsp cinnamon

Recipe Directions for Baked mini cake doughnuts

  1. Preheat oven to 425.

  2. Spray mini doughnut pan with nonstick cooking spray

  3. In a large mixing bowl, sift together flour, sugar, baking powder, nutmeg and salt.

  4. Add buttermilk, pumpkin, egg and butter.

  5. Stir until combined.

  6. Fill each doughnut cup about 1/2 full.

  7. Bake 4-6 minutes or until top of doughnuts spring back (Note: color is not an indication of doneness.

  8. Let cool in pan 4-5 minutes.

  9. Toss doughnuts in cinnamon/sugar mixture, glaze or frost, as desired.
