Recipe Ingredients for Baked Meditteranian Quorn chicken

200 grams quorn fillets, 4 fillets
1/2 small onion, finely sliced
1 garlic clove, chopped
400 grams canned tomatoes, chopped with juice
1 tablespoon tomato puree
2 oz celery, chopped finely
5 oz courgette, sliced thinly
5 oz yellow bell pepper, chopped finely
1 teaspoon mixed herbs
1 salt and pepper, season to taste

Recipe Directions for Baked Meditteranian Quorn chicken

  1. In a saucepan add all ingredients and mix well, bring up to boil then simmer with lid on for 25 -30 minutes or until veggies are soft.

  2. Place fillets in an ovenproof dish and pour over the sauce.

  3. Bake in the middle of a preheated oven at gas mark 6 for 35-40 minutes.

  4. Serve with your favourite veggies.
