Mashed potatoes using baked instead of boiled

Recipe Ingredients for Baked mashed potatoes

4 red potatoes
1/2 cup 2% milk
3 tbsp butter
1/4 tsp kosher salt
1 clove garlic
1/2 cup sour cream
1 dash black pepper

Recipe Directions for Baked mashed potatoes

  1. bake red potatoes in the oven at 400 for an hour, wrapped in foil and poked with a fork

  2. remove and let cool for a few minutes

  3. unwrap, remove half or all of the skin if you want, I keep some of the skin

  4. roughly quarter the potatoes, put into a largish sauce pan

  5. add the dairy ingredients and spices, blend with a hand blender until smoooth and creamy
