Recipe Ingredients for Baked Mashed Cauliflower

4 c cauliflower
4 tbsp grated parmesan cheese
2 tbsp. butter
1 1/2 c Squash, Winter, Spaghetti
1 oz proscuitto

Recipe Directions for Baked Mashed Cauliflower

  1. Preheat oven to 350 F

  2. poke holes in squash with skewer

  3. place in shallow baking pan uncovered and bake at 350 for about 45 minutes or until a knife can be inserted easily

  4. set aside and let cool until it can be handled

  5. clean, cut and steam cauliflower until tender

  6. drain, pat dry and set aside

  7. cut butternut squash in half

  8. scoop out seeds and discard

  9. use a fork to scrape flesh into bowl and set aside (it should resemble spaghetti)

  10. in a frying pan, cook proscuitto until crispy

  11. cut into small pieces

  12. in a food processor combine cauliflower, squash, proscuitto, butter and milk or cream if desired

  13. once blended and smooth, transfer mixture to a covered baking dish

  14. sprinkle with parmesan cheese and bake for 30 minutes or until bubbly
