Recipe Ingredients for Baked Macaroni and Cheese

2 cups elbow macaroni, uncooked
1 tbsp reduced-calorie margarine
1/4 cup flour
1/2 teaspoon dry mustard
1/8 teaspoon ground red pepper
3 cups skim milk
1 cup (4 ounces) shredded reduced-fat sharp Cheddar cheese
2 tbsp grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon paprika
1 tablespoon breadcrumbs

Recipe Directions for Baked Macaroni and Cheese

  1. Cook pasta according to package directions, omitting salt and fat. drain and set aside.

  2. Melt margarine in a large heavy saucepan over low heat; add flower, mustard, and red pepper. Cook, stirring constantly with a wire whisk, 1 minutes.

  3. Gradually add milk, stir well. Cook over medium heat, stirring constantly, 10 minutes or until slightly thickened and bubbly; remove from heat.

  4. Add Cheddar cheese and next 3 ingredients stirring until cheese melts.

  5. Stir in macaroni; spoon into a 2 quart baking dish coated with cooking spray. Combine paprika and breadcrumbs in a bowl; sprinkle over macaroni mixture.

  6. Cover and bake at 400 degrees for 30 minutes. Uncover and bake 5 additional minutes.
