Baked Mac N Cheese - Mitch's sister's recipe

Recipe Ingredients for Baked Mac N Cheese

2 tbsp. butter or margarine
2 tbsp. flour
1 tsp. salt
8 oz. Elbow Macaroni
1 tsp dry mustard
2 1/2 cups of milk
2 cups (8oz.) shredded mild cheese

Recipe Directions for Baked Mac N Cheese

  1. In saucepan, melt butter. Remove from heat, blend in flour, salt and dry mustard. Add milk, heat, stirring constantly, until sauce thickens a little and is smooth. Add 1 cups cheese, heat until melted, stirring occasionally. Meanwhile cook macaroni as directed on box, drain. Combine with sauce and place in a 2qt. casserole dish, top w/ remaining cheese. Bake @ 375 degrees F about 20-25 min or until nicely browned and bubbly. Makes 4 to 6 servings.

  2. NOTE: The above is the original recipe. Over the years, I have tweaked it here and there. I usually do 1 cup of heavy cream and 1 cups of milk (makes it richer). I also vary the cheeses ? sharp, Colby jack, mild, etc. I also add about 4 oz cream cheese and an oz of goat cheese (makes it creamier and gives it that something), again, all depends on what I have or I remember to buy! The amount above is what fits in that orange pot I have ? I double the recipe for big gatherings and what you usually see in the rectangular foil baking pan.
